Ingredienti x 2 persone:
- 4 uova biologiche o di allevamento all'aperto
- 1 bicchiere di passata di pomodoro
- basilico fresco
- peperoncino
- 40 gr fontina a dadini
- 40 gr scamorza affumicata a dadini
- olio extravergine di oliva
- un quarto di cipolla rossa tritata
- sale
Preparare il sugo, soffriggendo nell'olio la cipolla e aggiungendo la passata di pomodoro, il sale e il basilico.
Sgusciare le uova nel sugo, salarle leggermente e coprire. Dopo pochi minuti cospargere le uova con i dadini di formaggio e coprire di nuovo, finchè il formaggio non è fuso. Servire, decorando con foglioline di basilico fresco.
